States across the country are passing stricter food chemical safety laws to protect public health — but the food industry is behind a bill proposal in Congress that would erase these laws and prevent states from enacting new ones. There are currently more than 4,000 additives allowed in U.S. food, including chemicals used to add color or shine, stabilize artificial flavors and extend shelf life. Many have not been thoroughly reviewed for safety or have not been re-reviewed for decades, and scientists are raising concerns about their potential health harms of some of these chemicals.
